Lemon Bars
Yield: 24 Servings

1 Cup soft butter 1/4 Cup flour
1/2 Cup powdered sugar 2 Cup granulated sugar
2 Cup flour 6 Tbsp fresh lemon juice
dash of salt grated rind of 2 lemons
4 eggs, beaten

Combine butter, sugar, flour and salt and mix well. Press mixture in 9 x 13-inch greased pan. Bake at 350°F for 15 minutes or until lightly browned. Combine flour and sugar; mix in beaten eggs, lemon juice and rind. Pour onto slightly cooled crust. Bake at 350 F for 25 minutes or until filling is set. Cool and sprinkle with powdered sugar.
