Connie's Cashew Brittle

2 Cups Sugar 3 Cups Cashews
1 Cup Butter 1/2 Cup Water
1 Cup Corn Syrup 1 Tsp Baking Soda

In saucepan combine sugar, corn syrup, and water. Cook over medium heat, stirring frequently until sugar is dissolved and comes to a boil. Blend in butter and stir often, after temperature reaches thread stage (approx) 230° and add cashews and stir constantly until temp reaches approx. 280°. Remove form heat quickly stir in baking soda mixing thoroughly. Pour onto two cookie sheets so it will spread thin. Remove from pans as soon as possible and turn over. Cool and break into pieces. Working quickly, stretch brittle slightly with greased fingers to about 16 x 12. Cool completely. Break into smaller pieces. (2 1/2") Adj temp according to altitude.
