Jed and Jenny's Favorite Recipes

Pumpkin Cake
Yield: 18 Servings

1 box yellow cake mix 2 Tsp pumpkin pie spice
(set 1 cup aside of mix) 1 Cup sugar
2 Tbsp flour 1/2 Cup brown sugar
1/2 Cup melted butter 1/4 Cup sugar
1 egg 1 Tsp cinnamon
1 15oz can libby pumpkin filling 1/4 Cup butter softened
2 beaten eggs Whipped Cream Or Cool Whip
2/3 Cup milk

Mix remaining cake mix with flour, melted butter and 1 egg press into greased 9x13 baking dish Filling: Mix pumpkin, beaten eggs, milk and pumpkin pie spice, sugar and brown sugar and pour over crust Topping: Blend cup of cake mix, 1/4 cup sugar, cinnamon and softened butter with a pastry blender until crumbly sprinkle over top of filling. Bake at 375°F for 45 mins-1 hr or until sides start to set. Enjoy hot or cold. Top with home made whipped cream or Cool Whip
