Gianni’s Yellow Sponge Cake
Yield: 12 Servings

10 Eggs, separated 1/2 Cup cornstarch
1/2 Tsp Rum Flavoring 2 Tsp baking powder
1 Tsp Vanilla 1 Cup Sugar
1 Cup flour

Pre-heat oven to 375°F. Prepare pans with parchment and spray with cooking spray In a medium bowl, sift flour, cornstarch and baking powder five times. Set aside. In large bowl, beat egg whites until fluffy. Add sugar and continue beating until mixture is glossy. Add egg yolks and continue to beating for 2-3 mins. Slowly fold in dry ingredients a little at a time until slightly mixed. Pour into prepared pans and bake for 15-20 minutes Remove from oven, cool for 5 mins, remove from pan and cool on rack. Layer and top with fruit and whipping cream, make it really beautiful and then eat!
