Spinach Quiche

1 Recipe Single Basic Pie Crust -Or Milk
1 /2 Cup Onion, Chopped 1/2 Tsp salt
6 Slices Bacon, Chopped 1/8 Tsp White Pepper
8 eggs, Beaten 3 Cups Fresh Spinach*, Chopped
1/2 Cup Sour Cream 2/3 Cup Mozzarella, Shredded
1/2 Cup Half & Half, Light Cream 1/2 Cup Shredded Swiss

Prepare and roll out pie crust and line a 9 in pie plate with pastry. Trim and crimp edges as desired. Line un-pricked pastry with a double thickness of aluminum foil Bake in a 450° oven for 8 minutes. Remove foil and bake for another 4-5 minutes or until pastry is set and dry. Reduce oven temp to 325°. Meanwhile in a skillet, cook onion and bacon until onion is tender and bacon is crisp. In a bowl beat together eggs, sour cream, milk salt and pepper. Stir in onion mixture, spinach and cheeses. Pour into pie shell. Bake at 325° for 45-50 minutes or until a knife inserted halfway between the center and the edge comes out clean. Let stand for 10 minutes before serving.
If you don't have fresh spinach, use a 10 oz bag of frozen spinach- cook and drain thoroughly.
