Prepare and roll out pie crust and line a 9 in pie plate with pastry. Trim and crimp edges as desired. Line un-pricked pastry with a double thickness of aluminum foil Bake in a 450° oven for 8 minutes. Remove foil and bake for another 4-5 minutes or until pastry is set and dry. Reduce oven temp to 325°. Meanwhile in a skillet, cook onion and bacon until onion is tender and bacon is crisp. In a bowl beat together eggs, sour cream, milk salt and pepper. Stir in onion mixture, spinach and cheeses. Pour into pie shell. Bake at 325° for 45-50 minutes or until a knife inserted halfway between the center and the edge comes out clean.
