Best Banana Bread
| 2 cups all-purpose flour |
1/2 Cup butter or margarine -- softened |
| 1 1/2 tsp baking powder |
1 cup sugar |
| 3/4 tsp baking soda |
2 eggs |
| 1/2 tsp salt |
1/2 cup dairy sour cream |
| 1 1/2 cups mashed ripe bananas |
1/2 cup chopped walnuts |
| 1 tsp lemon juice |
1/2 cup miniature semisweet chocolate pieces |
1-Preheat oven to 375. Grease three 7 1/2x3x2 inch loaf pans; set aside. 2-In a medium bowl, stir together the flour, baking powder, baking soda and salt. Set aside. 3- In a small bowl stir together mashed bananas and lemon juice. Set aside. In a large mixing bowl using an electric mixer on medium speed, cream toether the butter or margarine and sugar until the mixture is light. 4- Add the eggs, one at a time, beating well after each addition. 5-Add banana mixture to the sugar mixture until well blended. Add the flour mixture alternately with the sour cream stirring after each addition. Stir in the chocolate pieces and nuts. 6- Divide batter among the 3 prepared pans and bake for 35-40 mins or until a wooden toothpick comes out clean. Remove from oven. Set the pans on a wire rack and cool for 10 mins. Remove the loaves from the pans; cool completely.
I absolutely love this recipe! The bread comes out so moist! The batter should look like a box cake batter after mixing- it's very light and fluffy. I usually make mini-muffins with it- but only cook those for 12-15 mins. I don't usually put the chocolate chips in but put 1 cup of nuts instead. Hope you enjoy!
